Elderflower season is upon us so grab your baskets, run out into the country side and pick some lovely blooms, whip them up into some delicious cordial and then make these delicious pavlovas!
BLACKBERRY, ELDERFLOWER AND MINT PAVLOVAS So, it’s late summer. You’re having a barbecue and serving salads, leaving the oven free for ages. Why not make these for pudding? This light dessert is so delicious, you won’t believe your mouth. They are very easy to make, but look great. You can also make them a day in advance and keep them in the fridge. The combination of elderflower, blackberry and mint is so refreshing that, even though these contain about a metric ton of whipped cream, you’ll leave the table feeling light and happy. Makes 6 Ingredients For the meringues 3 large egg whites 100g caster sugar Purple gel food colour 75g icing sugar 250ml double cream 100g blackberries For the syrup 100g caster sugar 25g mint leaves 3 tbsp St Germain elderflower liqueur (or elderflower cordial) Tool Kit Baking tray / Electric whisk / Large piping bags / Large star-shaped nozzle / Wire cooling rack
