A Creme Brulee recipe with a modern twist

We really love all different kinds of food and dishes here at Hardie Grant, and we love to try new things. Which is why for National Crème Brulee day we wanted to share with you a twist on this classic dessert. Step forward Miso Crème Brulee from Man Food by Billy Law. 

 

 

I’ve had many unusually flavoured crème brûlées in my gastronomic journey around the world, including this miso-flavoured brûlée, which is incredible. As we all know, salt enhances the sweetness of dessert, hence the saltiness of the miso paste works like a treat in this crème brûlée, without being overpowering – Billy Law

 

Serves 4

 

5 large egg yolks

50 g (1 3⁄4 oz) sugar, plus extra for topping

2 teaspoons vanilla extract

420 ml (14 fl oz) thickened (whipping) cream (35% fat)

125 ml (4 fl oz/1⁄ 2 cup) milk

2 teaspoons miso paste
