Posh Pancakes
Tender, fluffy, and flavoursome, these pancakes are a delicious way to use up unfed sourdough starter. For best results, slather with butter and jam.
MAKES about 12 pancakes
TAKES 15 minutes
250g (9oz) sourdough starter
1 egg pinch salt
1⁄4 tsp bicarbonate of soda
1⁄2 tsp baking powder
1⁄2 tbsp caster (super fine) sugar
1 tbsp vegetable oil, plus extra for frying
Stir all the ingredients together in a mixing bowl.
Heat a frying pan over a high heat and brush with oil. Reduce the heat to medium, pour in dessert spoonfuls of the batter (about 30ml/1 oz) and cook for 30 seconds–1 minute, or until bubbles form on top and the underneath is golden. Flip and cook for 30 seconds–1 minute more. Repeat with the remaining batter.
Serve straight from the pan or keep warm in a 150°C/300°F/gas 2 oven.
