National Honey Week runs from 23-29th October and is a way of celebrating the honey crop and recognising the vital role of the honey bee to our environment and way of life. We have loads of recipes that use honey as a main ingredient, but this one is one of our favourites (and looks super cute).

Honey Bears
These are very simple to make, especially with leaf gelatine. You can also use powdered gelatine, but it takes longer to dissolve and then sets far too quickly, making it hard to get into the moulds in time. If you want to add the merest drop of food colouring, you can do so, but I prefer them without. I add the spices here when I make these in winter, especially if the kids are full of cold. It is very easy to find the moulds for these online, and some even come with a little pipette, which makes the whole business much, much more straightforward. |
Makes about 60 small or 24 large
Ingredients
30g/1oz leaf gelatine
60ml/¼ cup lemon, lime, grapefruit, sour orange or yuzu juice
50g/3 tbsp runny honey
Finely grated zest of ½ lemon or lime
A pinch each of ground ginger, cinnamon and turmeric (optional)
