Eat for good health with these delicious and nutritent packed Beef Satay sticks from The Medicinal Chef: How to Cook Healthily by Dale Pinnock.
Having spent some time out in Malaysia, I soon became obsessed with satay. Delicious stuff. A really simple dish to make, but packed with flavour. As well as tasting great, it is seriously nutrient-dense: iron, zinc, B vitamins, magnesium…indulgent health! Serves: 2 1 large sirloin steak, trimmed and diced For the marinade juice of ½ lime 1 lemongrass stalk, very finely chopped 1 clove garlic, finely chopped 2 teaspoons light soy sauce ¼ teaspoon ground turmeric For the dipping sauce 1 heaped tablespoon peanut butter ½ lemongrass stalk, very finely chopped 1 clove garlic, finely chopped 1 small red chilli (chile), finely chopped ¼ teaspoon Chinese five-spice powder 2 teaspoons light soy sauce 3 tablespoons coconut milk |
Mix all the marinade ingredients together in a bowl. Add the steak and leave to marinate in the fridge for at least 3–4 hours, ideally overnight.
When ready to cook, combine all the dipping sauce ingredients with 1 tablespoon water and mix well. (You may find that mixing the peanut butter and spices together first and adding the liquids a little at a time, mixing well between additions, will give you a better texture.) Set aside.
Remove the beef from the marinade and thread the chunks onto some skewers.
Line a baking sheet with foil and lay the beef skewers on it. Cook under a hot grill (broiler) for 15 minutes, turning regularly. Serve with the dipping sauce.
