WATERMELON, ROSE & MINT AQUA
makes 1.8 litres (61 fl oz)
prep 5 minutes,
plus chilling time
100 g (31⁄2 oz) watermelon,
chopped
handful mint leaves,
roughly chopped
1–2 tablespoons rose water
ice cubes (optional)
Depending on seasons, I’ll use any manner of fruit for this. The rose and mint complement mulberries, pomegranates or rhubarb equally. If using rhubarb, soak chopped rhubarb overnight in boiling water following the suggested amount below. I keep the rind on the watermelon for the visual impact but, by all means, remove it if you prefer.
Place all the ingredients into a large pitcher and add 1.8 litres (61 fl oz) water, stir together and store in the fridge at least 30 minutes before serving. Pour into glasses over ice, if you like.
